1 large tomato, chopped
1 large cucumber, peeled and chopped
1 red pepper, chopped
½ onion, chopped
24 oz of tomato juice
¼ cup olive oil
¼ cup red wine vinegar
1 clove garlic, pressed or chopped fine
Dash of Tabasco sauce
Salt and pepper to taste
Sugar to taste
Puree all ingredients in a blender. Chill. Garnish with additional chopped cucumbers, tomatoes and peppers.
