INGREDIENTS
- 10 Tomatoes, chopped
- 1 small onion, chopped
- 3 cloves garlic finely chopped
- 1/3 cup olive oil
- 1 tsp dry oregano or 2 tsps fresh oregano
- 1 red or yellow or fresh chili pepper, diced
- salt and pepper
- Parmesan cheese
- Crushed red pepper
Preparation:
Heat the oil and sauté garlic and onion. Add other ingredients and cook for a few minutes. Tomatoes should still hold their shape.
Toss with hot pasta. Sprinkle grated cheese
For Puttanesca, add several chopped calamata olives, chopped anchovies and additional garlic.
