Fresh Tomato Pasta Sauce
INGREDIENTS
  • 10 Tomatoes, chopped


  • 1 small onion, chopped


  • 3 cloves garlic finely chopped


  • 1/3 cup olive oil


  • 1 tsp dry oregano or 2 tsps fresh oregano


  • 1 red or yellow or fresh chili pepper, diced


  • salt and pepper


  • Parmesan cheese


  • Crushed red pepper
Preparation:
Heat the oil and sauté garlic and onion. Add other ingredients and cook for a few minutes. Tomatoes should still hold their shape.

Toss with hot pasta. Sprinkle grated cheese

For Puttanesca, add several chopped calamata olives, chopped anchovies and additional garlic.
