INGREDIENTS
- 5 or 6 Tomatoes on the Vine
- 1 small can of tomato sauce
- ½ cup olive oil
- ½ cup water
- 3 cloves garlic
- 1 teaspoon paprika
Preparation:
Wash Tomatoes and dice into small pieces. Place in strainer, salt, and allowing excess water to drain for about 20 min. Place large skillet on stove, heat on medium and add olive oil. Add crushed garlic moving in pan with wooden spoon for about a minute. Add tomatoes and stir for another minute. Now add paprika and stir again heating for another minute. Finally add can of tomato sauce and water then heat until mixture starts to bubble. Reduce to low and simmer for 20 to 30 mins. Add salt and pepper to taste. Serve over your favorite pasta. Serves 4.
