Fredy’s Focaccia with Cherry Tomatoes
INGREDIENTS
2.5 cups flour
1 tablespoon yeast diluted in luke warm water
½ cup olive oil
1 potato peeled, boiled, cooled, and mashed
Pinch of salt
1 cup cherry tomatoes sliced in half
1 tablespoon fresh basil
Preparation:
Mix flour, yeast, olive oil, pinch of salt, and mashed potato in bowl and work into dough with hands. Cover with clean towel and let rise at room temperature for ½ hour. Spread dough out onto floured 10’ flat pan. Arrange cut cherry tomatoes on top and drizzle with olive oil, add pinch of salt to taste. Cut basil into fine pieces and sprinkle on top. Bake at 400 degrees in preheated oven for 25 to 30 mins.
