Cucumbers and Soba Noodles
INGREDIENTS
  • 1 pound soba noodles


  • 1 cucumber


  • ½ cup soy sauce


  • several drops hot pepper oil


  • 2 tbsp white vinegar


  • 1 tsp finely minced ginger


  • ½ cup sesame oil


  • Sprinkle sesame seeds
Preparation:
Cook noodles till tender, about 5 minutes. Drain.
Peel cucumber and remove seeds. Julienne flesh into long, thin pieces.
Whisk together soy sauce, pepper oil, vinegar, ginger and sesame oil.
Toss with warm noodles.
Gently mix in the cucumber and top with sesame seeds.
Serve at room temperature or slightly chilled.
