3 tbsp lemon juice
2 tbsp minced parsley
1 tsp sugar
1 clove garlic, minced
1/3 cup olive oil
4 or 5 orange, red and yellow bell peppers, thinly sliced into lengthwise strips
Salt and pepper to taste
Combine first 4 ingredients. Add oil gradually whisking until thoroughly blended. Pour dressing over peppers mixing well. Add salt and pepper to taste. Chill for an hour to let flavors blend.
